If thou art averse to gluten, fear not for there is a gluten-free option in this recipe. Simply swap the all-purpose flour for almond flour or gluten-free all-purpose flour. With this substitution, thy scones shall be as splendid and delicious as ever.

Methinks blueberry scones are a splendid addition to any vegan brunch. If thou hast a desire for fruity scones instead of savory, take note of this variation. Upon combing the flour, baking powder, sugar, salt and pepper, fold in 1 cup of fresh blueberries into the dough. The result shall be sweet and delectable scones.

For those who cannot tolerate dairy fare, Isa Chandra Moskowitz has gifted us with the perfect solution. Replace the vegan butter stick with coconut oil or another vegan butter alternative of thy choosing. This switch creates a smooth and tender crumb in every bite.

Tips for Perfect Results

Tomatoes and rosemary complement each other perfectly in this scone recipe

To make the perfect tomato-rosemary scones, pay attention to these helpful tips and tricks that will help you achieve the desired outcome.

First off, it is essential to use fresh rosemary for this recipe as it provides an attractive fragrance and an earthy flavor when combined with other ingredients. Dry rosemary may not deliver similar results, and thus I recommend freshly plucked rosemary flowers.

When combining the flour, baking powder, sugar, salt, and pepper in a bowl to make dough, ensure to whisk the ingredients together thoroughly with a fork. Doing this helps produce a homogeneous mixture that ensures even distribution of flavors.

Another critical tip is to blend the vegan butter or olive oil well with the dough using your fingertips or a pastry cutter. This process assures optimal spread of fats throughout the dough, leading to tender-textured scones.

Suppose you are using a gluten-free flour substitute. In that case, I advise prepping the dough and placing it in the refrigerator for about 30 minutes before kneading it again. This helps is making it easier for you to work with while shaping and cutting the scones.

Lastly but importantly, baking time is crucial in achieving an excellent result. I suggest following the recommended baking time carefully and setting your oven timer accordingly. By doing so, you’ll avoid overbaking or under-baking your scones.

By following these tips, you will undoubtedly bake some amazing vegan tomato-rosemary scones every time!

Bottom Line

In verily, these Vegan Tomato-Rosemary Scones are a majestic delight that will tickle your fancy and make your taste buds sing with glee. The fresh rosemary, tangy tomato sauce, and savory olive oil create a harmonious flavor that will leave you wanting more. I got hooked on these at my local Whole Foods bakery and then was ecstatic to find the recipe in Isa Chandra Moskowitz's book, Vegan Brunch. The best part is that I can now make them gluten free for my husband! I hope you enjoy these savory scones as much as we do. They're divine with some melty Earth Balance Buttery Spread or Tofutti Better Than Cream Cheese.

Ingredients

  • 3 cups all-purpose flour (OR Bob's Red Mill Gluten-Free All-Purpose Baking Flour plus 1 teaspoon xantham gum)
  • 2 tablespoons baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/3 cup olive oil
  • 1 (14 ounce) can tomato sauce (about 1 1/2 cups)
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons fresh rosemary, chopped (about 4 sprigs)

Instructions

  • Preheat the oven to 400 degrees Fahrenheit. Lightly grease a large baking sheet.
  • In a large mixing bowl, combine flour, baking powder, sugar, salt, and pepper.
  • In another bowl, combine wet ingredients and rosemary.
  • Make a well in the center of the dry ingredients and pour in the liquid. Gently mix with a wooden spoon.
  • When the batter is loosely holding together, turn it onto a lightly floured work surface and gently knead until a soft dough forms. DO NOT overmix. Some patches of flour are good. Add a little extra flour if the dough seems sticky. Divide dough in two and form each section into a 6-inch disk. Slice each disk into six pieces (cut in half and then cut each half into thirds). OR if you are lazy like me and don't need your scones to be pretty, you can just scoop the dough into 8-12 mounds on the cookie sheet (like drop biscuits).
  • Place scones on the baking sheet and bake 14-16 minutes or until the tops are firm. Remove and let cool a bit on plate or cooling rack. Serve either warm or at room temperature.
