Vegan Garlic Asian Noodles Recipe

Ingredients
  

  • 2 tablespoons soy sauce
  • 1/4 cup peanut butter
  • 2 tablespoons rice vinegar
  • 1/3 cup vegetable broth
  • 2 teaspoons minced garlic
  • 8 ounces dried spaghetti or 8 ounces brown rice noodles
  • 4 cups water
  • 3 sprigs green onions, chopped
  • 16 ounces frozen mixed vegetables

Instructions
 

  • Combine garlic peanut sauce ingredients and mix until well integrated. Season to taste.
  • Place spaghetti, water, and garlic peanut sauce in the pot. Bring to a boil over high heat.
  • When the water is boiling, turn down the heat and allow to simmer, stirring every few minutes.
  • Add bag of frozen mixed vegetables. Cook until the sauce thickens and the pasta and veggies are tender, around 15 minutes.
  • Add the green onions and stir to coat.
  • Enjoy!
